Ingredients

Servings: 6
Makes:

2.0 tbsp. olive oil
3.0  fennel bulbs
1.0  onion
2.0 cloves garlic
1.0 juice of lime
75.0 grams chorizo
1.0 litre chicken stock
200.0 ml cream
2.0 tbsp. fresh tarragon
 to taste salt
 to taste pepper


Instructions

STEP 1/7

Peel and dice the onion and the garlic. Chop the fennel and the chorizo.

STEP 2/7

Heat the olive oil in a large saucepan over low heat.

STEP 3/7

Add the onion, garlic and fennel and cook for 2-3 minutes until soft but not coloured.

STEP 4/7

Add the chorizo and the chicken stock and let everything simmer for 30 minutes.

STEP 5/7

Then add the cream, lime juice and tarragon.

STEP 6/7

Transfer mixture to the Braun JB 7192 PowerBlend 7 and blend on speed 4 to a smooth puree.

STEP 7/7

Season with salt and pepper and garnish with some more tarragon.
