Ingredients

1 tsp chia seeds
1 tsp ground cinnamon
1 tsp pumpkin seeds
1 tsp salt
0.5 tsp baking powder
160 ml vegetable oil
2 tsp bicarbonate of soda
250 grams caster sugar
3 as needed free-range eggs
350 grams plain flour
450 grams pumpkin
1 zest of orange


Instructions

STEP 1/6

Preheat oven to 180ºC and line a 12-hole muffin tray with paper cases.

STEP 2/6

Peel and seed the pumpkin and place it on a baking tray, cover with foil and bake in preheated oven until just tender, about 20 minutes.

STEP 3/6

Purée the pumpkin with the MQ 9 to a course purée. The innovative ACTIVEBlade shaft with 250% more active cutting surface makes the pumpkin purée 2 times finer.

STEP 4/6

In a large bowl, stir together flour, sugar, bicarb, baking powder, cinnamon, chia seeds, grated orange zest and salt.

STEP 5/6

Beat together the pumpkin purée, vegetable oil and eggs in the MQ 70 Food processor accessory. Stir pumpkin mixture into flour mixture until smooth.

STEP 6/6

Spoon the muffin mixture into prepared muffin cups. Sprinkle with pumpkin seeds and bake in preheated oven for 20 - 25 minutes, until a skewer inserted into the centre of a muffin comes out clean.
