Gently steamed asparagus with mojo picon and shaved manchego

Ingredients

Servings: 4
Makes:

24 stalks of asparagus, blanched
6 cloves garlic
30 grams manchego cheese, shaved
2 tbsp. olive oil
1 juice of lime
 to taste salt
 to taste pepper
350 ml olive oil
100 ml sherry vinegar
1 tsp. cumin, ground
3  red chilli, de-seeded
2 tsp. paprika
 to taste salt
 to taste pepper


Instructions

STEP 1/6

For the mojo picon, mix all the ingredients in a bowl and stir well.

STEP 2/6

Place the mixture afterwards in an airtight container in the refrigerator until required.

STEP 3/6

Fill the steam booster of the Braun IdentityCollection Food steamer FS 5100 with water until max.

STEP 4/6

Peel the asparagus and put half each in a separate basket. Brush the asparagus spears with olive oil, lime juice and season with salt and pepper.

STEP 5/6

Simply set the timer to 40 min and return when done.

STEP 6/6

Drizzle the hot asparagus with mojo picon, sprinkle shaved manchego over the top and serve.
