Peel the onion and garlic and chop finely with Braun’s MultiQuick 9 350ml chopper attachment.
Wash the aubergine and cut into cubes with the food processor attachment using the dicing insert.
Heat the oil in a pot and briefly sauté the onion and garlic. Add the aubergine, (pimientos and olives if desired,) and fry for 2 minutes. Add the rice noodles, lemon juice as well as stock and simmer for 10 minutes.
Finely chop the parsley and feta cheese in the 350ml chopper attachment.
Arrange the finished pasta on plates. Spread the feta cheese with parsley over the pasta.
Tip: Put 1-2 tablespoons tomato paste to the vegetable stock. This will give the dish a more intense tomato and Mediterranean flavour and will also thicken the broth.This recipe was prepared using Braun’s MultiQuick 9 (MQ 9195XLI). Prepare the recipe also with one of our other models. A 350ml chopper attachment is not necessarily needed but you can simply use the food processor attachment with the chopping tool instead.
