Ingredients

Servings: 4
Makes:

2.0  red onions
1.0 clove garlic
1.0 tbsp. ginger
600.0 grams sweet potatoes
2.0 tbsp. butter
1.0 tbsp. turmeric
1.0 litre chicken stock, or vegetable stock
150.0 ml coconut milk
1.0 juice of lime
 to taste salt
 to taste pepper
 as needed mint leaves


Instructions

STEP 1/7

Peel and dice the onions, garlic, ginger and the sweet potatoes.

STEP 2/7

Heat the butter in a large saucepan over low heat.

STEP 3/7

Add the diced onions, garlic and ginger and cook for 2-3 minutes until soft but not coloured.

STEP 4/7

Add the turmeric, the sweet potatoes and the stock. Bring everything to a boil and let simmer for 20 minutes.

STEP 5/7

Add the coconut milk and the lime juice while stirring.

STEP 6/7

Transfer mixture to the Braun JB 7192 PowerBlend 7 and blend to a smooth puree on speed 4.

STEP 7/7

Season with salt and pepper. Garnish with fresh mint leaves and a little coconut milk.
