Sweet potato biryani with masala spice mix & cucumber raita

Ingredients

Servings: 2
Makes:

0.5 tsp chilli powder
0.5 tsp ground black pepper
0.5 tsp sea salt
1 as needed cucumber, (peeled and cut into half)
1  red chilli, chopped
1 as needed red onion, finely chopped
1 tsp ground cumin
1 tsp cumin seeds
1 tsp fennel seeds
1 tsp ground cinnamon
1 tsp tomato puree
1 tsp turmeric powder
100 grams cashew nuts
2 cloves garlic, peeled & crushed
2 as needed star anise
2  caraway seeds
2  coriander seeds
2  fresh coriander, chopped
2  olive oil
2 tsp biryani masala spice mix
200 grams basmati rice
250 grams coriander leaves
3 as needed cloves
300 grams sweet potatoes, peeled & diced
3 cm ginger root, chopped
400 grams natural yoghurt
400 ml vegetable stock
6 as needed black peppercorns
6 as needed cardamom pods
 to taste seasoning


Instructions

STEP 1/10

Heat the olive oil in a large non-stick saucepan over medium-low heat. Add the onion, garlic and chilli and cook for 2-3 minutes until soft.

STEP 2/10

Add the sweet potato and cook, stirring, for 2 minutes or until well combined.

STEP 3/10

Stir in the rice, tomato puree, seasoning and the spice mix until coated.

STEP 4/10

Stir in the stock and reduce heat to a low heat. Cover with a lid and cook for 10 minutes or until the stock is absorbed and the rice is cooked.

STEP 5/10

Sprinkle with cashew nuts and chopped coriander.

STEP 6/10

For the spice mix, place all the ingredients in a non-stick frying pan over a medium heat.

STEP 7/10

Cook, stirring for 1 minute until lightly toasted and aromatic.

STEP 8/10

Transfer to Braun’s MQ 60 Coffee and spice grinder accessory and pulse until coarsely crushed.

STEP 9/10

Store in an airtight container.

STEP 10/10

For the cucumber and coriander raita, bring all the ingredients together and form a rough puree with Braun’s MultiQuick 9 Hand blender.
