Ingredients

Servings: 4
Makes:
For the batter
250 grams flour
1 pinch salt
1  egg
150 grams butter, cold, in pieces

For the filling
125 grams fresh spinach
10 grams fresh basil
160 grams cherry tomatoes
70 grams olives, pitted
120 grams feta cheese
6  eggs
80 ml cream
1 tsp oregano
  salt
  pepper

Optional for serving
  pine nuts, roasted
  fresh basil


Instructions

STEP 1/13

For the dough, place all the ingredients in a bowl and knead with your hands.

STEP 2/13

Shape the dough into a ball, wrap in cling film and place in the fridge for 30 minutes.

STEP 3/13

Roll out the dough into a square that is slightly larger than the air fryer container so that the edges of the dough can be raised.

STEP 4/13

Line the Airfryer tray with a piece of baking paper cut to size.

STEP 5/13

Cover the rolled out pastry with baking paper, fill with baking peas and blind bake for 15 minutes at 180°C using the MultiFry FastOven program for baking (muffin symbol).

STEP 6/13

For the filling, wash the spinach and basil well and chop roughly.

STEP 7/13

Wash the cherry tomatoes. Halve the olives.

STEP 8/13

Whisk the eggs and cream in a bowl with a MQ5 hand blender + whisk.

STEP 9/13

Add the spinach and basil and season with oregano, salt and pepper.

STEP 10/13

Place the olives and tomatoes on the quiche dough, crumble the feta over the tomatoes and olives, but leave some for the topping.

STEP 11/13

Pour the egg mixture over the quiche and spread the remaining feta on top.

STEP 12/13

Bake the quiche with the FastOven Program for baking at 170°C for approx. 30 minutes in the MultiFry Pro until crispy. Check after 20 minutes - if the top is browning too quickly, cover with foil.

STEP 13/13

Cut the Mediterranean quiche into pieces and serve with toasted pine nuts or fresh basil.
