Ingredients

Servings: 2
Makes:

1 as needed red chilli pepper
2 as needed spring onions
2  peanuts
2  sesame oil
2 tsp lemon juice
250 ml water
4  butter
6 medium courgettes
 to taste seasoning


Instructions

STEP 1/7

Attach the Spiralizer accessory to Braun’s MultiQuick 5V Fit hand blender and cut the courgettes into a linguine shape.

STEP 2/7

Finely cut the spring onions into rings, chop the chilli pepper.

STEP 3/7

Heat some oil in a pan and fry the courgette noodles for 1-2 minutes.

STEP 4/7

Roast the peanuts in a pan without fat or oil.

STEP 5/7

Season with salt and pepper.

STEP 6/7

Stir the peanut butter, lemon juice, water and sesame oil together into a sauce and mix in a bowl with the courgette noodles.

STEP 7/7

Then serve with spring onions, chilli and roasted peanuts.
