Strawberry dragon fruit margarita

Ingredients

Servings: 4
Makes:

3/4 cup tequila
1/4 cup orange liqueur
1/3 cup lime juice, fresh
1 cup frozen dragon fruit, cubed
1 cup frozen strawberries
1 cup fresh strawberries, (reserve best 4 for garnish)
1  dragon fruit, cut in half crosswise
3 tablespoon honey
2 cups ice cubes
1/4 cup superfine sugar, or palm sugar (for rims)
1  lime, cut into 4 thin slices (to garnish)


Instructions

STEP 1/7

Place half of the cut dragon fruit in the refrigerator or freezer while you make the drinks.

STEP 2/7

With a melon baller or a small ice cream scoop, scoop 4 balls out of the other half of the dragon fruit and chill.  And add any remaining fruit pulp to the blender jug.

STEP 3/7

Place all the liquids, fresh strawberries, and honey in the blender jug with the pulp. Secure the lid. Select the smoothie program and turn the iTextureControl dial to smooth. Turn the machine on. When completed, scrape down the sides with a spatula.

STEP 4/7

Add the frozen strawberries, frozen dragon fruit, and ice on top.  Replace and secure the lid and remove the lid plug. Place the tamper into the opening.

STEP 5/7

Select the frozen dessert program and the smooth setting on the iTextureControl dial. Use the tamper until mixture is combined and slushy.

STEP 6/7

Prepare 2 small dessert plates. One with sugar and one with a bit of water. Dip the inverted glasses into the water and then rim them with the sugar. Glasses can be prepared ahead and refrigerated until ready to serve.

STEP 7/7

Pour the frozen cocktails into the prepared glasses and garnish with slice of lime, a dragon fruit ball and a slice of dragon fruit reserved in the refrigerator. Serve immediately while still slushy!
