Ingredients

1 cup raw almonds, soaked in 470ml hot water (for vanilla almond milk)
4 cups water, filtered (for vanilla almond milk)
1 tablespoon vanilla extract, (for vanilla almond milk)
1 cup oats, rolled (for creamy oat milk)
3 cups water, ice cold, filtered (for creamy oat milk)
1 cup ice cubes
 pinch of sea salt
1 tablespoon raw honey, or agave syrup (optional)
1 tablespoon vanilla extract, (optional)


Instructions

STEP 1/5

For the vanilla almond milk:

Soak the almonds in very hot (but not boiling) water for 15-20 minutes. This will soften the skins and they should come off easily by rubbing them with your fingers. Discard them and pour the skinless almonds into the jug.

STEP 2/5

Add the filtered water and the vanilla extract to the jug. Secure the lid. Select the manual program and start on speed 1. Quickly increase to speed 10 and blend for 40-50 seconds, or until you reach the desired consistency.

STEP 3/5

Slowly pour the milk through the nut bag or a fine mesh strainer over a bowl to strain. Gently squeeze the bag to extract the milk. Discard the pulp or save for other uses. Store the milk in an airtight container in the refrigerator for up to 1 week. Stir or shake before using. 

STEP 4/5

For the creamy oat milk:

Add all the ingredients to the jug in the same order as listed above. Secure the lid and turn the machine on. Select the manual program and start at speed 1. Quickly increase to speed 10. Blend for 20-30 seconds. Be careful not to over blend to a gummy/starchy consistency.

STEP 5/5

Slowly pour the milk through the nut bag or a fine mesh strainer over a bowl to strain. Gently squeeze the bag to extract the milk. Discard the pulp or save for other uses. Store the milk in an airtight container in the refrigerator for up to 1 week. Stir or shake before using.


Alternative milks can be used as a milk substitute for just about anything. It is gluten and lactose free. Use in cereal, drink with cookies, baked goods and smoothies.
