  sale e pepe
500 grammat bietola, washed, trimmed of tough stalks & chopped
0.5 tsp. noce moscata macinata
1 litra brodo vegetale
0.5  limone, juice of
1 medium patata, peeled & diced
1  cipolla media, chopped
1 nippu erba cipollina fresca, chopped
2 tbsp. olio d'oliva
1 nippu prezzemolo, chopped
1 clove aglio, crushed
150 ml cream, or sour cream
150 grammat feta, crumbled


Instructions

ÉTAPE 1/6

Heat the olive oil in a large saucepan over low heat, add the onion and garlic and fry for 2-3 minutes, until softened but not yet browned.

ÉTAPE 2/6

Bring to a boil then, turn the heat down and simmer for 10 minutes.

ÉTAPE 3/6

Add the potatoes and vegetable stock.

ÉTAPE 4/6

Add the chard, herbs and nutmeg and simmer for 10 more minutes. Then, let it cool down.

ÉTAPE 5/6

Add the milk, cream and lemon juice and blend to a smooth creamy soup with help of Braun’s MultiQuick hand blender.

ÉTAPE 6/6

Season to taste.


Garnish with crumbled feta cheese and serve immediately.
