A quick and simple side dish made using just a few basic ingredients. You could add a handful of grated Parmesan into the breadcrumb mixture before coating the courgettes, or some herbs or spices.

2 courgettes, cut into 5mm slices
100 grams breadcrumbs
salt, as needed
pepper, as needed
1 garlic clove, finely chopped
20 grams fresh parsley, finely chopped
1 egg, beaten

In a medium mixing bowl, add the breadcrumbs, garlic, parsley, and seasoning. Mix until combined.
Dip the courgette slices into the beaten egg, then into the breadcrumb mixture, ensuring the courgette is coated on both sides.
Lightly oil the drawer.
Working in batches, transfer some of the coated courgette slices into the drawer, add a drizzle of oil.
Select VEGETABLES, 190°C, set 10 minutes and press the START button.
Tip: rotate halfway through cooking.
Repeat this cooking process with the remaining courgettes.
