Baked aubergines

This vibrant baked aubergine dish features tender aubergine slices topped with a flavourful mixture of diced tomatoes, bell peppers and cheese, perfect to serve as a side dish or light main course.

350 grams aubergines

300 grams bell pepper, cut in cubes

150 grams tomatoes, cut in cubes

salt, as needed

pepper, as needed

olive oil, as needed

70 grams cheddar, grated

Instructions

Cut the aubergine lengthwise into 1 cm slices.

In a small bowl combine the cubed tomato and pepper with the grated cheese and season well.

Lightly oil the drawer, add the aubergine slices. Brush the aubergines with oil and season with salt.

 

Tip: Cook in batches as necessary.

Select the OVEN function, VEGETABLES, 190°C, set 5 minutes and press the START button.

Remove the drawer, turn the aubergine slices over, then set the cooking time for a further 5 minutes.

Remove the drawer, add the tomato and cheese mixture on top of the aubergine slices, then set the cooking time for a further 8-10 minutes.

Once the desired degree of gratin is achieved, remove and serve.

Repeat this cooking process with the remaining aubergine and topping.
