Mashed potatoes with codfish saltimbocca & sage butter

Ingredients

Servings: 2
Makes:

1  cod loin fillet, (approx. 250g), without skin
750 grams floury potatoes,  peeled and quartered
5 slices bacon
1 teaspoon olive oil
1 tbsp. butter
1 sprig of sage
80 grams butter
100 ml whole milk
 to taste salt, to taste
 pinch of nutmeg, grated


Instructions

STEP 1/6

Wash fish, pat dry and season with salt and pepper.

STEP 2/6

Wrap each piece of fish with a slice of bacon.

STEP 3/6

Heat oil in a coated frying pan and fry fish parcels for 2-3 minutes on each side.

STEP 4/6

Add butter and sage leaves and fry briefly.

STEP 5/6

Place peeled potatoes in a pan and fill up with cold, salted water until they are covered by approx. 1cm of water. First bring water to the boil, then cook potatoes at medium heat for about 20 minutes. Towards the end of the cooking time, drain cooking water, add milk, butter, nutmeg and salt to the potatoes and mash with the Braun’s MultiQuick 9 hand blender and its pureé attachment.

STEP 6/6

Arrange cod on mashed potatoes, sprinkle with sage butter and serve immediately.
