Ingredients

2.5  cucumbers, large
2  spring onions, chopped
300 ml Greek yoghurt
25 grams dill, chopped, plus extra to serve
2 tbsp. crème fraîche, or sour cream
1 tbsp. lemon juice
  seasoning
1 cloves garlic, crushed
0.5 bunch coriander, stalks removed


Instructions

STEP 1/6

To get an intense cucumber flavour, slice the cucumbers in half lengthways. Scoop out the seeds with a teaspoon and discard them.

STEP 2/6

Cut two of the cucumbers into pieces. To soften, put them in a colander and sprinkle them with a little salt. Leave for 10-15 minutes.

STEP 3/6

Peel and cut the onion and garlic.

STEP 4/6

Add the onion, garlic, yogurt, dill and lemon juice to the container. Mix all the ingredients with your Multiquick hand blender. If the preparation is not liquid enough, add a little water until you get the desired consistency.

STEP 5/6

Season to taste.

STEP 6/6

Let stand in the refrigerator 2 to 3 hours before serving.


Garnish with crème fraiche or sour cream, the diced cucumber and fresh dill. Serve immediately.
