2  fennel bulbs, for the salad
1  apple, green, for the salad
100 grams pecans, for the salad
  green cress, for the salad
1  maple syrup, for the dressing
1  white wine vinegar, for the dressing
2  olive oil, for the dressing
1  shallot, for the dressing
  salt
  pepper


Instructions

STEP 1/6

For the salad, toast pecans in a pan without oil over medium heat and let them cool.

STEP 2/6

Clean the fennel, but in half and remove the stalk. Keep the fennel greens. Slice the fennel coarsely with Braun’s MultiQuick 9 food processor attachment using the coarse shredding insert.

STEP 3/6

For the dressing, peel the shallot and chop very finely with the 350 ml chopper attachment.

STEP 4/6

Mix maple syrup, vinegar, olive oil and the chopped onion with the whisk attachment and season with salt and pepper.

STEP 5/6

Arrange the fennel and apple on a serving platter, sprinkle nuts and then dressing on top.

STEP 6/6

Top with fennel greens and cress and serve.
