Salmon and potato croquettes

These salmon and potato croquettes are made with steamed salmon, spring onion, fresh dill and chives, for a light and delicious healthy option. Serve with a side of tangy tartar sauce.

Ingredients

Servings: 4
Makes:

250 grams salmon fillet
200 grams potatoes
1  spring onion, trimmed, finely sliced
1 Tbsp fresh dill, leaves only, chopped
1 Tbsp fresh chives, finely chopped
1  egg
1 Tbsp breadcrumbs, approx.
  salt, as needed
  pepper, as needed

For breading
200 grams breadcrumbs, approx.
  sunflower oil, as needed


Instructions

STEP 1/8

Peel then boil the potatoes in a pan of salted water, mash them, then set aside to cool in a medium bowl.

STEP 2/8

Steam the salmon fillets until cooked through, set aside to cool completely. Once cooled, remove the skin and any bones. Flake the salmon into the bowl with the cooled mashed potatoes.

STEP 3/8

Add the chopped spring onion, dill, chives, egg, seasoning and breadcrumbs, mix thoroughly until combined.

STEP 4/8

Refrigerate the mixture for 20-30 minutes.

STEP 5/8

Remove the mixture from the fridge. Shape the mixture into croquettes with your hands, each one should be 50 grams approx, then roll them in the breadcrumbs.

STEP 6/8

Lightly oil the drawer, then transfer 6 croquettes into the drawer. Refrigerate the remaining batch until ready to cook.

STEP 7/8

Select FISH, 200°C, set 15 minutes and press the START button.


Turn halfway through cooking.

STEP 8/8

Remove the cooked croquettes, repeat the cooking process with the remaining batch.
