Ingredients

0.5 as needed cinnamon stick
1 as needed pineapple, trimmed & peeled
1 as needed star anise
200 grams sugar
3 Tbsp sugar
300 ml cream
300 ml mascarpone
4 as needed cardamom pods
6 as needed black peppercorns
1 zest of limes
1 juice of lemon
2 juice of limes


Instructions

STEP 1/7

Lightly roast the spices for one minute in a hot oven (approx. 250 °C) until they begin to release their aroma.

STEP 2/7

Attach the MQ 20 chopper accessory to Braun’s MQ 7 Hand blender. Put in the spice mix and press the extra-large speed button to evenly blend all the ingredients. Keep pulsing and do not increase the speed too much in order not to over work the mixture. Mix in the sugar and transfer onto a tray.

STEP 3/7

Cut the peeled and trimmed pineapple into 8 pieces. Thread each piece onto a wooden skewer.

STEP 4/7

Press the cut sides of the pineapple skewers into the sweet spice mixture on the tray.

STEP 5/7

When ready to cook, heat a griddle pan or put a barbecue on its medium setting. Place the spiced pineapple skewers on the griddle or barbecue and cook or 3 minutes on each side or until golden brown and caramelized cooked.

STEP 6/7

For the lemon and lime mascarpone cream, place all the ingredients in Braun’s 600 ml plastic beaker and attach the MQ 10 whisk accessory. Whip on low speed until thick like firmly whipped cream.

STEP 7/7

Serve the sweet-spiced pineapple skewers with the lemon and lime mascarpone cream.


This recipe was prepared using Braun’s MQ 7 Hand blender with its MQ MQ 20 (350 ml) Chopper accessory and its MQ 10 whisk accessory, like for example in the set: MQ 725 Omelette.
This recipe can be also prepared with MQ 5045 WH Aperitive, MQ 545 Aperitive or MQ 525 Omelette.
