A classic modern-day dessert. But did you know that the origins of tiramisu go back as far as the Renaissance?

Ingredients (Serves 4)

  • 2 eggs
  • 2 dessertspoons sugar
  • 2 dessertspoons marsala wine
  • 100 g mascarpone cheese
  • 8 soft Italian sponge biscuits
  • 3 dessertspoons very strong coffee
  • 3 dessertspoons coffee liqueur
  • 1 dessertspoon cocoa powder

Separate the egg whites from the yolks and whisk the egg whites until stiff. Place in the fridge.

Put the egg yolks, sugar and marsala in a bowl and whisk them to a thick cream in a bain-marie. Allow this mixture to cool slightly but continue stirring. Then mix in the whisked egg whites.

Put the mascarpone cheese in a bowl and blend in the marsala cream.

Cover the base of a square baking tin with the sponge biscuits and pour the coffee and coffee liqueur over them. Spread the mascarpone cream mixture evenly over the biscuits and leave in the fridge for at least 2 hours. Sprinkle the cocoa powder on top before serving.
