Pea and mint soup with salmon tartare

Ingredients

Servings: 6
Makes:

3  leeks, finely chopped
1  onion, finely chopped
50 grams butter
2  potatoes, peeled an diced
1 litre chicken stock
8-10  
500 grams frozen peas
250 ml milk
1 juice of lime
  salt
  pepper
250 grams salmon fillets, skinned
2 tbsp. , chopped
3 tbsp. olive oil
1 juice of lemon
  salt
  pepper


Instructions

STEP 1/6

Melt the butter in a heavy based saucepan then sauté the leeks mint and onion until tender but not browned.

STEP 2/6

Add the diced potatoes and stir to mix. Pour in the stock, bring to a boil, cover, reduce to a low heat and simmer for 15 minutes.

STEP 3/6

Put in the peas and cook for a further 5 minutes, uncovered. Use Braun’s MultiQuick Hand blender to liquidize the mixture while adding milk, lime juice into the pan. Due to the one-hand speed wheel, you are able to do two things at the same time: Adjust the speed with one hand and add ingredients with the other hand.

STEP 4/6

Season with salt and pepper.

STEP 5/6

For the salmon tartare, attach Braun’s MQ 20 chopper accessory to your hand blender. Mince the salmon with the chives, olive oil and lemon juice. The chopper accessory is perfectly suited for chopping herbs and small amounts of food.

STEP 6/6

Season the salmon tartare and place a spoonful in each bowl. Pour the soup around the salmon tartare to serve.


Try substituting the mint with lemongrass for a refreshing change.
