Cod, potato and olive bites

These healthy bites combine flaky cod, creamy mashed potatoes, and briny olives. Shaped into golden, crunchy bitesize snacks, they're a delicious Mediterranean twist on classic croquettes.

Boil the potatoes in a pan of salted water, peel and mash them, then set aside to cool in a medium bowl.

Using a food processor, or mini chopper, blend the diced cod fillet with the egg until smooth. Transfer the cod mixture into the cooled mashed potatoes. Add the olives, parsley, garlic and seasoning then mix thoroughy until combined.

Tip: If the mixture is too liquid, add a handful of breadcrumbs.

Shape the mixture into round patties, approx. 35-40 grams each, dip them first in the beaten egg, then in the breadcrumbs.

Lightly oil the drawer, then transfer some of the cod and olive bites into the drawer, allow some space around the patties, cook in batches if necessary.

Select FISH, 180°C, set 15 minutes and press the START button.

Turn halfway through cooking.

Remove the cooked patties, repeat the cooking process with the remaining batch.
