Apricot Bars Hand Blender Recipe

  • 12 oz. dried apricot halves
  • 1 ½ cups sugar
  • 2 cups water
  • 2 cups all-purpose flour
  • ½ tsp salt
  • 1 cup packed light brown sugar
  • 1 tsp vanilla extract
  • 1 cup old-fashioned rolled oats
  • 1 cup melted unsalted butter
  • 1 cup walnut halves

  1. Using Braun’s Multiquick Hand blender with 2-cup chopper attachment, add apricots and finely chop, starting out slowly and gradually increasing to a high speed when the pieces are smaller.  Add the apricots to a sauce pan with sugar and water and cook on medium heat for 30 minutes until apricots are broken down and mixture is sauce-like.        
  2.  Preheat oven to 350°F. Butter and flour a 15 ½ by 10-inch jelly roll pan. In a bowl, mix together flour, salt, brown sugar, vanilla extract and oats. Add melted butter and stir together. Press mixture into prepared pan. Bake for 15 minutes or until crust is lightly browned. Remove base from oven.
  3.  Place walnuts in Braun’s Multiquick Hand blender with 2-cup chopper attachment, pulse about 18-20 times or until nuts are finely chopped but still have some texture.
  4.  Once apricots are ready, spread evenly on baked base. Sprinkle walnuts on top and bake for about 20 minutes. When cool, cut into squares. These cookies freeze well.
