Ingredientes

For the salmon
4  salmon fillets, (approx. 150–200 g per fillet)
1 tsp vegetable oil, e.g. sesame oil or neutral oil
1 pinch of salt
1 pinch of pepper

For the teriyaki sauce
4 Tbsp soy sauce
2 Tbsp honey
2 Tbsp rice vinegar
1 Tbsp sesame oil
1  garlic clove, finely chopped
1 tsp ginger root, grated
1 tsp cornstarch, (optional, for a thicker sauce)
2 Tbsp water, for cornstarch

For the wild broccoli
400 grams broccolini, (e.g. Bimi)
1 Tbsp olive oil
1  garlic clove, finely chopped or pressed
1 pinch of salt
1 pinch of pepper
1 tsp lemon juice
1  red bird's eye chilli, or green, finely sliced (optional)

For garnish
1 Tbsp toasted sesame seeds, white or black
2  spring onions, finely sliced into rings


Instruções

PASSO 1/15

For the marinade: Mix the ingredients for the teriyaki sauce (soy sauce, honey, rice vinegar, sesame oil, garlic, ginger) in a bowl.
 

PASSO 2/15

Marinade the salmon fillets in it, for at least 15 minutes, ideally up to 30 minutes in the refrigerator.

PASSO 3/15

Brush the salmon fillets with a little oil (so that they don't stick) and place them in the first drawer of the TwinCook 3. Set aside.

PASSO 4/15

For the teriyaki sauce: Heat the remaining marinade in a small saucepan and dissolve 1 teaspoon of corn flour in 2 tablespoons of water.
 

PASSO 5/15

Stir the starch into the sauce and simmer briefly until it thickens.

PASSO 6/15

For the wild broccoli: Wash and dry the broccoli. If necessary, trim the woody ends slightly.
 

PASSO 7/15

In a bowl, mix the broccoli with olive oil, salt, pepper and garlic.

PASSO 8/15

Place the marinated broccoli in the second drawer of the TwinCook 3. Make sure that the pieces are not on top of each other so that they cook evenly.

PASSO 9/15

For the first drawer set the Fish program at 180°C for 7-9 minutes.

PASSO 10/15

For the second drawer set the Vegetable program at 180°C for 8-10 minutes depending on how crispy you like it.

PASSO 11/15

As soon as the temperature and time have been set, the SYNC button appears. Press the SYNC button, then press the Start button. 
 

PASSO 12/15

Occasionally turn the broccoli with kitchen tongs during cooking.

PASSO 13/15

When the time is over remove the cooked salmon from the drawer and pour over the thickened teriyaki sauce.

PASSO 14/15

Sprinkle with roasted sesame seeds and spring onion rings.

PASSO 15/15

Place the broccoli on the plate, drizzle with lemon juice if desired and garnish with the finely chopped chili pepper.
