For the hummus:
Drain the chickpeas and reserve the liquid. Put the chickpeas with all the other ingredients into the beaker and puree with the MultiQuick blending shaft for at least 4 minutes.
Add the chickpea liquid until the mixture is nice and creamy but not too runny. Season with salt and pepper and set aside.
For the sandwiches:
Insert the grill plates into the MultiGrill 9 and place it in contact grill position. Set the lower and upper thermostat knob to 200°C. Press the start/stop button to preheat the grill.
When the display shows ready, brush both sides of the aubergine slices with olive oil and salt and place them on the grill. Close the grill and cook for 6-8 minutes and then remove from the grill.
Spread some hummus on 2 slices of wholegrain bread. Now put the onion, aubergine, sundried tomatoes and, if desired, raisins one after the other on the toast slices. Spread the remaining two slices of bread thickly with hummus to finish off the two sandwiches.
Place the sandwiches on the grill. Close the grill and cook for 6-8 minutes, remove from the grill and serve warm.
