Simple coconut Banoffee with chia seeds

Ingredients

200 grams coconut flesh
100 grams pecan nuts
1 tbsp. honey
150 grams almonds, peeled
200 ml coconut milk
1 teaspoon chia seeds
150 ml water
2  bananas
1 teaspoon cocoa powder
250 grams sugar
1 teaspoon honey
200 ml cream
2  bananas, ripe
50 grams butter


Instructions

STEP 1/4

Place the pecans, almonds, chia seeds and cocoa powder in the MQ 70 food processor and blend until a crumbly mix forms, then add the honey.

STEP 2/4

For the banana and coconut cream, place the bananas, coconut flesh, coconut milk as well as the honey in the beaker of the MQ9 and blend to a thick, smooth purée. Even hard foods like coconuts can be easily blended due to the up and down movement of the innovative shaft which results in 250% more active cutting surface to work with.*

STEP 3/4

For the toffee sauce, bring the water and sugar to the boil in a heavy bottomed pan. Cook (without stirring) until golden brown for 5-6 minutes.

STEP 4/4

Remove from the heat and immediately add the cream and butter. Stir well until smooth and add the two sliced bananas.


To serve: Layer 4 glasses with the crumble base and place a good spoonful of toffee and bananas on top. Divide the banana-coconut cream between the 4 glasses and place another layer of toffee and bananas on top of the cream. Finish with a scoop of vanilla ice cream and sprinkle with chia seeds. Serve immediately.
