Spiced carrot and lemongrass soup

Ingredients

Servings: 6
Makes:

600 grams carrots, diced
1 medium onion
4 tbsp. olive oil
1 tsp. mild curry powder
1 litre chicken stock
150 ml coconut milk
  lemongrass stalks, chopped
½  juice of lime
2 tbsp. coriander,  freshly chopped
 to taste salt
 to taste pepper


Instructions

STEP 1/5

Cut up the onion into small pieces and then chop with Braun’s TributeCollection Jug blender JB 3060 using the turbo function. This turbo function provides short bursts of maximum power to ensure even finer results and more control. Heat the olive oil in a large saucepan and gently sauté the onion until tender.

STEP 2/5

Roughly chop the carrots and lemongrass and add them into a pot. Gently stir in curry powder and chicken stock. Simmer for about 15 minutes until the carrots are tender.

STEP 3/5

Add the coconut milk, coriander and lime juice and season with salt and pepper.

STEP 4/5

Use the Jug blender again to blend the soup to the desired consistency. Due to the thermo resist glass, you can easily blend hot soups without the glass cracking.

STEP 5/5

Garnish with extra coconut milk and coriander before serving.


Sometimes it can be hard to get your hands on fresh lemongrass. You can substitute the lemongrass with lime leaves or even lemon verbena in Mediterranean countries. You can also replace the carrots with pumpkin!
This recipe was prepared using Braun’s TributeCollection Jug blender JB 3060.
This recipe can also be prepared using Braun’s MultiQuick Hand blender with its MQ 20 (350 ml) chopper accessory and its blending shaft, like for example in our set: MQ 5045 aperitive. You can also use IdentityCollection Jug blender 5160 or TributeCollection Jug blender 3010.
