Chilled cucumber & coriander soup with ceviche of prawns & fresh herbs

Ingredients

Servings: 4
Makes:

2 juice of limes
2 large cucumbers
1 tsp. ginger, fresh, grated
2  spring onions, chopped
1  tomato, peeled, deseeded and chopped
1 clove garlic, crushed
1  spring onion, finely chopped
300 ml vegetable stock
0.5  red chilli, deseeded and finely chopped
0.5 bunch coriander, stalks removed
3 tbsp. coriander, fresh, chopped
300 ml Greek yoghurt
 to taste salt
 to taste pepper
8 large prawns, shells and intestine removed


Instructions

STEP 1/5

Peel and cut the cucumbers roughly. Put in a sieve and sprinkle with a little salt to soften. Leave for 20 - 25 minutes.

STEP 2/5

To avoid mess and tearing eyes, attach Braun’s MQ 20 chopper accessory to a suitable hand blender and quickly chop the spring onions and the garlic clove by pulsing one or two times.

STEP 3/5

Insert the chopping blade into the MQ 40 chopper/ blender accessory and add the cucumber slices, the chopped onions and garlic, as well as the vegetable stock, coriander and Greek yoghurt and blend to a fine purée. Finally, season with salt and pepper and pass the soup through a fine sieve. Cover and chill for 2 - 3 hours.

STEP 4/5

For the ceviche cut the prawns in half lengthways and place in a bowl. Re-use the MQ 20 chopper accessory and quickly chop ginger, spring onion, fresh chili, and coriander. Add these chopped ingredients with the lime juice to the prawns. Leave to marinate for 6 - 8 minutes, and then cook at medium heat in a pan. Add the chopped tomatoes and season with salt and pepper.

STEP 5/5

Now you can make a little salad in the centre of 4 soup bowls with the ceviche. Pour the chilled soup around and serve immediately.
