Tomato-Potato Mash with roasted Halloumi and Courgette

500 grams potatoes, floury boiling
3 medium tomatoes
1 tbsp. chives
1  courgette
130 grams halloumi
20 ml milk, or cream/ vegetable milk
  olive oil
  salt
  pepper


Instructions

STEP 1/6

Peel the potatoes, chop them with Braun’s MultiQuick 9 food processor attachment using the dicing insert and cook in salted water.

STEP 2/6

Cut the tomatoes into quarters and chop coarsely in the 500ml chopper attachment in Pulse mode. Then transfer into a bowl.

STEP 3/6

Wash the courgettes, cut into quarters and roughly chop together with halloumi in the 500ml chopper attachment in Pulse mode.

STEP 4/6

Heat some olive oil in a pan and fry the courgette and halloumi cubes until golden brown. Season with salt and pepper.

STEP 5/6

Drain the potatoes, add the milk and 3 tablespoons olive oil to the potatoes. Mix by using the purée attachment to a creamy purée. Add a little milk if necessary until the consistency is right. Season well with salt and pepper, then stir in the diced tomatoes and chives. To serve, place some purée on a plate and garnish with halloumi courgette cubes, drizzled with pepper and olive oil.

Tip: The mashed potatoes also taste great instead of tomatoes, e.g. with fresh basil pesto.
This recipe was prepared using Braun’s MultiQuick 9 (MQ 9195XLI). Prepare the recipe also with one of our other models. A dicing insert for the food processor attachment is not necessarily needed but you can simply use the food processor attachment with the shredding insert instead. Also a 500ml chopper attachment is not necessarily needed but you can simply use the food processor attachment with the chopping tool or the 350ml chopper attachment.
