Delicata Squash with Maple Sriracha Sauce

This recipe was prepared using the MultiQuick 9 Hand blender with the food processor attachment, blender attachment, and beaker.



  • ¼ red onion
  • 1-1/4 lb Delicata squash
  • 1 tsp olive oil
  • Salt and pepper, to taste
  • 2 tsp chopped cilantro
  • 2 tsp toasted and salted pumpkin seeds


  • ¼ cup Greek yogurt
  • 1 tbsp olive oil
  • ½ tsp Siracha, or to taste
  • 1 tsp maple syrup
  • Salt and pepper, to taste

  1. Preheat oven to 425° F.
  2. Cut ends off the squash then quarter; no need to peel. Remove seeds and cut squash into pies to fit into Braun’s MQ 9 feeding tube of the food processor.  Place the slicing blade in the food processor and attach the hand blender and slice squash.  Add oil and season squash with salt and pepper. Place on baking sheet.
  3. Bake squash for about 25-30 minutes or until cooked and easily pierced with a fork; stir halfway through cooking.
  4. While the Delicata is roasting, make the sauce. Add all of the sauce ingredients to the beaker attachment. Attach blending wand to the power pack and blend until smooth and creamy. Season with salt and pepper. Spoon mixture into sealable bag and cut off the corner of the bag to create a pastry bag.
  5. Remove squash from oven and spoon onto a serving platter. Drizzle with yogurt sauce and  top with chopped cilantro and pumpkins seeds.
