Ingredients (Serves 4)

  • 200 g dark (bitter) chocolate
  • Zest of 1 untreated orange
  • 1/2 teaspoon fine coffee powder
  • 5 egg whites
  • Pinch of salt
  • 2 dessertspoons sugar
  • 250 g cream

Mousse au chocolat is best made the day before it is eaten.
