Marc Fosh's stir fried lemon and coriander chicken
1. Cut the chillies, red pepper, garlic and spring onions into manageable slices and then use the Braun Multiquick and its chopper accessory on a medium speed to finely dice.
2. Heat a wok or large frying pan until it is very hot and then add the vegetable oil. Stir-fry the chicken over a high heat for 2-3 minutes until the meat is browned all over.
3. Add the chopped vegetables and stir-fry for 3 minutes until golden brown. Add the dark soy sauce, lemon juice and coconut milk.
4. Stir-fry over a high heat until everything is nicely glazed and the chicken is cooked through. Finish with some coriander leaves and serve immediately.

You can add whichever vegetables you would like into this meal (or maybe whichever vegetables your kids will eat!) This is great for a quick family dinner and was made to go with a bowl of steaming noodles.
