Coffee gives this classic dessert a rather special taste. Why not try this recipe?
Ingredients (Serves 4)
- 200 g dark (bitter) chocolate
- Zest of 1 untreated orange
- 1/2 teaspoon fine coffee powder
- 5 egg whites
- Pinch of salt
- 2 dessertspoons sugar
- 250 g cream
Mousse au chocolat is best made the day before it is eaten.
Cut the chocolate into pieces. Place it in a bowl with the orange zest and coffee powder and melt it all in a bain-marie. Add a pinch of salt to the egg whites and whisk until stiff. Add the sugar. Whisk again until all the tops stay stiff. Whisk the cream in a second bowl until just as stiff. Mix the whisked egg whites into the cream and add the liquid chocolate. Leave the mousse in the fridge overnight and decorate it the next day with cream, coffee beans and white chocolate flakes.
