The wonderful flavour of freshly brewed coffee makes these crackers a real treat – and they go just as well as a light dessert.
Ingredients (makes 45)
- 90 g flour
- 45 g sugar
- 90 g oat flour
- 4 tablespoons butter or margarine (softened)
- 70 ml strong, brewed coffee, cooled
Mix the flours and sugar together in a large bowl or food processor. Cut in the butter until the mixture resembles coarse meal. Add the coffee and blend to a firm dough. Divide the dough into two same-sized portions for rolling. Roll the dough out to around 30 mm thick on a floured surface.
Cut the dough into 5 cm shapes. Place the crackers on a lightly greased or parchment-lined baking sheet. Prick each one all the way through in two or three places with a fork. Bake at 160°C for 12 to 18 minutes until the crackers are medium-brown. Cool on a rack.
