Makes:
For the fritters
1  garlic clove, small
250 grams zucchini
80 grams tomatoes
1 bunch of mint
1 bunch of parsley
1  egg
70 grams flour

For frying
  oil

For the wraps
2  tortilla wraps, (alternatively iceberg lettuce)
100 grams lollo bianco

For the dressing
150 grams yogurt
  tomatoes, the inside of
20 ml tahini
20 ml lemon juice
1 tsp honey


Instructions

STEP 1/10

For the fritters, wash the zucchini, cut in half and grate in Braun’s MultiQuick 7 food processor using the fine shredding insert.

STEP 2/10

Carefully squeeze the grated zucchini in a kitchen towel.

STEP 3/10

Wash the tomatoes, cut in half, remove the insides and set aside for the sauce. Cut the flesh into small cubes.

STEP 4/10

Peel the garlic. Then wash the mint and parsley, put half aside for the wraps and finely chop the rest with the garlic in the MultiQuick 350 ml chopper.

STEP 5/10

Mix the garlic, zucchini, tomatoes, herbs, egg and flour in a bowl and season with salt and pepper.

STEP 6/10

Heat the oil in a frying pan and spoon the zucchini and tomato mixture into the pan and shape into fritters with the back of a spoon.

STEP 7/10

Fry the zucchini and tomato fritters until crispy on both sides.

STEP 8/10

For the tahini dressing, puree the yogurt, leftover tomatoes insides, tahini, lemon juice and honey in the beaker with the MultiQuick 7 blending shaft until creamy. Then season with salt and pepper.

STEP 9/10

Place the lettuce on wraps, top with zucchini-tomato fritters, sprinkle remaining herbs on top and drizzle with yogurt tahini sauce.

STEP 10/10

Fold the wrap in at bottom, then sides, and roll up.
