Preparation time: 30 minutes
- Spiralize raw beetroot using the MQ5 fit spiralizer accessory. Place beetroot noodles into salted boiling water for 5 minutes. Drain and set aside
- For the sauce, heat olive oil in a pan, Add finely chopped garlic and thyme. Add spinach and saute until wilted. Season with lemon juice and salt and pepper
- Coarsely chop walnuts using your MQ5 jug blender. Add walnuts and sauce to beetroot noodles
- Serve with crumbled Feta.
