Beetroot noodles with feta, walnuts and spinach

Ingredients

  • 1 raw red beetroot
  • 200g feta cheese
  • 2 cups of spinach
  • 2 tbs olive oil
  • Thyme
  • 1 lemon
  • 1 handful of walnuts
  • 1 clove of garlic
  • Salt, pepper

Preparation time: 30 minutes

Serves: 2

Method

  1. Spiralize raw beetroot using the MQ5 fit spiralizer accessory. Place beetroot noodles into salted boiling water for 5 minutes. Drain and set aside
  2. For the sauce, heat olive oil in a pan, Add finely chopped garlic and thyme. Add spinach and saute until wilted. Season with lemon juice and salt and pepper
  3. Coarsely chop walnuts using your MQ5 jug blender. Add walnuts and sauce to beetroot noodles
  4. Serve with crumbled Feta.
