1. Lightly roast the seeds and nuts in a hot oven (approx 250°C) until they begin to colour and release their aroma.

2. Put them in the Braun Multiquick 5 hand blender’s chopper accessory and blend them to form a dry mixture. Do not over work them.

3. Cut the chicken breast into thick chunks and then place onto a wooden skewer.

4. Roll the chicken skewers in dukkah to coat evenly.

5. When ready to cook, heat a griddle pan or put a grill on its highest setting. Place the chicken skewers on the griddle or grill and cook or 2-3 minutes on each side, or until golden brown and cooked through.

6. Serve with a garnish of crisp green salad and a wedge of lime.


Marc Fosh’s tip

Dukkah is great to serve with some olive oil and bread as nibbles when you have guests over. You can also substitute the hazelnuts with the pistachios for a vibrant colour.

This recipe has been prepared using the Braun Multiquick 5 hand blender with its chopper accessory.

• 135g coriander seeds
• 100g hazelnuts
• 75g cumin seeds
• Salt and pepper to taste
