The fresher, the better
Coffee tastes best when freshly ground immediately before brewing. Vacuum-packed coffees may well deliver the same degree of freshness but as soon as you open the pack, the coffee will unfortunately start to lose its aroma on contact with light and air.
Ideally, you should buy your coffee beans a week at a time, store them in an airtight container in a dark place and only grind the amount you need for immediate use. When grinding your own beans, it is better to use a modern electric coffee grinder like the Braun CaféSelect. How coarse should your beans be ground? Ground too fine, the coffee will taste bitter, ground too coarse it will be weak because the full flavour cannot be extracted from the beans.
