Kale & Pistachio Pesto

This recipe was prepared using Braun's MultiQuick Hand blender and its food processor attachment.

Ingredients

  • 12 ounces kale, hard stems removed and each leaf ripped into 4 pieces
  • 1 tbsp shelled pistachio nuts
  • 2 garlic cloves
  • 3/4 cup extra virgin olive oil
  • 2 tbsp water
  • Salt and pepper, to taste

More traditional pesto variation

  • Made about 1 ¾ cups
  • 2 ounces Parmesan cheese
  • 12 ounces kale, stems removed
  • 1 tbsp shelled pistachios
  • 2 garlic cloves
  • ½ cup olive oil
  • 2 tbsp water
  • Salt and pepper. to taste

  1. Add all the kale pieces to the Braun MultiQuick food processor attachment. Then add remaining ingredients--pistachio nuts, garlic, olive oil and water in the bowl.  Process until finely chopped. 
  2. Transfer to an airtight container and store in the refrigerator until ready to use. Tastes even better the next day. 

More traditional pesto variation

  1. Cut parmesan chunk into 4 pieces and add to the Braun MultiQuick 2-cup chopper attachment; finely chop. Set aside.  
  2. Remove the stems from the kale, and add ½ to the Braun MultiQuick food processor attachment. Process to make some room. Then add remaining kale, pistachio nuts, garlic, olive oil and water to the bowl.  Process until finely chopped. If necessary, lift off the top and push down the kale from the sides and continue to process to a fine paste. (Add more water or olive oil if too thick.)
  3. Transfer to an airtight container and store in the refrigerator until ready to use. Tastes even better the next day.
