Chicken Fajitas

This recipe was prepared using Braun's MultiQuick Hand Blender with its 1.5-cup chopper and food processor attachments. 

Ingredients

  • ¼ tsp salt + additional for seasoning
  • 1/8 tsp pepper + additional for seasoning
  • ½ tsp ground chili powder
  • 1 garlic clove
  • 1 tbsp fresh cilantro or 1 teaspoon dried + additional fresh for garnish
  • 2 scallions, cut into 4 pieces each
  • 1 lb. boneless, skinless chicken breast cut into strips
  • 2 ½ tbsp fresh lime juice
  • 4 tbsp olive oil, divided
  • 3 small red bell peppers, stem and core removed and cut into 2 1/2 –inch pieces
  • 1 small zucchini
  • 1 small red onion, peeled and cut in half
  • 8 6-inch corn or flour tortillas
  • 1 avocado, chopped, optional
  • 1 mango, chopped, optional
  • Sour cream or Greek yogurt, optional
  • Lime wedges, optional

  1. In a small bowl, mix together ¼ tsp salt, 1/8 tsp pepper, and ground chili powder.
  2. Using the Braun MultiQuick 7 1.5-cup chopper attachment, finely chop the garlic, cilantro and scallions by pulsing on high speed, about 5-7 pulses. Add it to the chili powder mixture. Stir to combine.
  3. Add the chicken to the mixture and stir to coat chicken. Add lime juice and 2 tablespoons olive oil and stir to combine. Cover bowl and refrigerate for 20 minutes.
  4. Prepare the Braun MultiQuick 7 hand blender food processor with the julienne accessory. Process the peppers, and then the zucchini. Remove each from bowl and squeeze out any excess water. Then switch to slicing blade and slice the onion.
  5. When chicken is ready, heat a non-stick pan on medium high heat. Add 1 tbsp oil and heat. Add the onions and sauté for 1-2 minutes or until just softened. Add the peppers and zucchini, season with salt and pepper and sauté 2 minutes until softened and sautéed. Remove vegetables from the pan. Set aside.
  6. Add another tbsp oil and add chicken. Cook for about 3- 4 minutes or until chicken is cooked through. Serve the chicken and vegetables immediately with warm corn or flour tortillas, avocado, mango, sour cream or yogurt and/or lime wedges.
