Three Fruity Prosecco or Champagne Cocktails

Ingredients

Simple Syrup
½ cup sugar
½ cup water
Fruit mixture below, to taste
1 bottle Champagne or sparkling wine such as Prosecco (I tested  with Prosecco)

Plum Ginger
2 plums, peeled, pit removed and sliced
1-inch piece of ginger, peeled
1 bottle Prosecco or Champagne

Blackberry Lemon
2 cups fresh blackberries
1 teaspoon lemon zest
Fresh lemon juice, to taste

Strawberry Lime
2 cups sliced strawberries
1 teaspoon lime zest
Fresh lime juice, to taste

Simple Syrup

  1. In a small saucepan add the sugar and water. Using the your MultiQuick Hand blender with whisk attachment whisk sugar in the water on medium heat until dissolved, about 4 minutes. Then precede with fruit flavors below.

Plum Ginger

  1. Add the sliced plums and ginger to the simple syrup and bring to a boil. Simmer on medium low for about 12 minutes until plums are soft. Remove ginger. Attach blending shaft to the hand blender and blend until smooth. Chill before using.
  2. When ready to serve add 2-4 tablespoons of the pureed fruit mixture to a large champagne flute or wine glass and top with Prosecco or Champagne.  Stir and serve immediately. (Note: Mixture can be made ahead and stored in a covered container in the refrigerator until ready to use.)

Blackberry Lemon

  1. Add the blackberries and lemon zest to the simple syrup and bring to a boil. Simmer on medium low for about 12 minutes until blackberries are softened. Attach blending shaft to the hand blender and blend until smooth. Strain mixture and chill before using.
  2. When ready to serve add 2-4 tablespoons of the pureed fruit mixture to a large champagne flute or wine glass and top with Prosecco or Champagne.  Squeeze in a bit of lemon juice, stir and serve immediately. (Note: Mixture can be made ahead and stored extra fruit mixture in a covered container in the refrigerator until ready to use.)

  2.
