Marc Fosh's piri piri chicken with avocado-yoghurt sauce

Method


1. Cut the chicken breasts lengthways into 8 even pieces. Set aside in a bowl/plate until ready to marinate. Place the marinade ingredients in the Braun Multiquick 7’s cordless hand blender large chopper accessory and pulse to puree.

2. Pour the marinade over the chicken pieces and marinate in the fridge for at least 10 minutes. Wash the large chopper accessory ready for re-use.

3. Heat a griddle pan and fry the chicken pieces over a high heat for 6-7 minutes on each side.

4. For the avocado-yoghurt sauce, place all the ingredients in the Braun Multiquick 7’s cordless hand blender large chopper accessory and pulse to a puree. Transfer to a bowl and serve immediately with the chicken.

• 2 tbsp chopped, fresh red chillies with stalks removed
• 50ml lemon juice
• 50ml olive oil
• 1tbsp paprika
• 2 tbsp fresh coriander, chopped

Ingredients for avocado-yoghurt sauce
• 2 avocados, peeled and diced
• 2 cloves garlic, crushed
• 3 tbsp Greek yoghurt
• 2 tbsp milk
• Juice of 2 lemons
• Salt and pepper to season
