Mocha got its name from a port on the Red Sea coast of Yemen, which was the major marketplace for coffee in the 15th-17th centuries. Here’s how to make what is often referred to as “Turkish coffee”.
- 7-8 g finely ground coffee per small cup
- 14 g finely ground coffee per large cup
- Sugar to taste
Boil the ground coffee and sugar with the appropriate amount of water for some time. Western European palates may find the taste of this traditional coffee somewhat unusual.
